Corn 'n' Fruit Medley


Yummy salads can be made by mixing fruits and vegetables. Adding sweet corn to this mixture makes the salad taste just wonderful. Here is a recipe that brings the best out of a blend of corn, fruits and vegetables. Give it a try!

Ingredients: (Serves two)
Sweet corn kernels – ½ teacup
Sweet lime – 1 no, peeled, deseeded
Pomegranate seeds – ¼ teacup
Capsicum – cut into small pieces, 2 tablespoons
Cabbage – shredded, 1 teacup
Salt – to taste
Peppercorns – 6-8no, ground coarsely
Sugar – ½ teaspoon

Corn 'n' Fruit Medley
Method: Place corn kernels in a vessel and steam for 5-10 minutes in a pressure cooker. Once ready, remove from the cooker and allow it to cool.

Peel, deseed and remove the flesh of sweet lime. Peel and remove the pomegranate seeds. Shred cabbage and cut capsicum into small pieces. Wash the cut vegetables and drain well. Mix the fruits, vegetables and sweet corn in a bowl. Add salt, sugar and ground pepper. Mix well. Refrigerate for 30 minutes. Serve chilled.
