We need a side dish to eat along with the main course, be it regional cuisine or otherwise. Spaghetti or any other pasta can be served with boiled vegetable or cutlets. However, adding a vegetable dish makes the meal wholesome. Cheesy vegetable deluxe has a creamy taste and it makes a good contrast to any pasta cooked in red sauce. Let’s see how to make this yummy, yet simple dish.
Ingredients: (Serves three)
Onion – 1 no, chopped finely
Garlic – 1-2 pods, chopped finely
Mace powder – a pinch
Red chilli flakes – ½ -1 teaspoon
(adjust to taste)
Green peas – shelled, ½ teacup or
100ml measure
Mixed vegetables – cut into medium sized cubes, 2 teacups or 400ml
measure
Salt – to taste
Olive oil – 1 tablespoon
Cooking cheese – grated, 2 tablespoons
For
the white sauce:
Butter – 2 tablespoons
Maida (All purpose flour) – 3 tablespoons
Milk – 2 teacups or 400ml measure
Salt – to taste
Pepper – ¼-½ teaspoon (adjust to taste)
Cooking cheese – grated, 1 tablespoon

Method
- How to make white sauce: Boil milk and allow it
to cool. Heat butter in a wok, add plain flour and mix it well in melted
butter. Sauté the flour till it turns light brown in colour. Switch off the
stove and allow it to cool. Add milk to the flour and mix very well without
lumps, preferably using a hand blender. Now add salt and pepper. Mix well. Cook
on low flame stirring continuously till the sauce thickens. Add the grated
cheese and mix well. Switch off the stove. Your white sauce is ready.
How
to make vegetable dish: wash, scrape and cut carrot
into cubes. Cut French beans into 1” long pieces. Wash, peel potato and cut
into cubes. Separate the cauliflower florets. Boil green peas in sufficient
water in a vessel till they are cooked, drain and keep aside.
