Cucumber - Bread Salad

Salads can be made interesting by the addition of fruits, pasta, bread, sprouts, cereals and different types of dressings. Combining raw vegetables with other ingredients also helps to build up volume, especially when you are low on the vegetables. Here’s an unusual combination of cucumber with bread covered in a sweet and sour dressing. Let’s see how to make this salad.

Ingredients: (Serves two)
Cucumber – 1 no
Bread – 2 slices
Honey – 1 tablespoon
Lemon juice – 2 teaspoons
Salt – to taste
Pepper powder – a generous pinch
Butter – 1 tablespoon
Basil – ¼ teaspoon 

Cucumber - Bread Salad
Method: Wash, peel and cut cucumber into medium sized cubes. Add salt and mix well. Keep aside for 10 minutes. Cut the bread slice into small pieces. Heat butter in a wok, add the bread pieces and sauté on low flame till the pieces turn golden brown in color. Switch off the fire and let the bread pieces stay in the warm wok. DO NOT COVER the wok.

Add honey, lemon juice, pepper powder and basil to the cucumber. Mix well and refrigerate for 20-30 minutes in the chiller compartment. Just before serving add the bread pieces to the salad and mix the contents well so that the dressing coats the bread pieces all over. Your yummy, crispy sweet and sour salad is ready!
