Aloo poriyal is the simplest and easiest potato recipe. Rasam rice and aloo poriyal make a famous combination.

Aloo/ Potato
– medium sized, 5 no
Onion –
medium sized, 2 no, sliced
Salt – to
taste
Mustard – 1
teaspoon
Urad dhal –
1 teaspoon
Red chilli
powder – 3 teaspoons (adjust to taste)
Turmeric
powder – 1 teaspoon
Oil – 3
tablespoons
Curry leaves
– a few

Method: Pressure cook aloo for 5
minutes or 5 whistles. Once the pressure subsides, remove aloo from the cooker
and allow it to cool. Then peel the potatoes and cut them into cubes. Add
required salt, turmeric powder and chilli powder and mix well. Keep aside.
Heat oil in
a kadai, add mustard seeds and when they start to sputter, add urad dhal.
Saute till the dhal turns golden brown in color. Add cut onions and fry till
they become transparent. Now add aloo pieces and fry on low heat, stirring
occasionally for approximately 5 minutes. Garnish with curry leaves. Serve with
rice and sambar/ kuzhambu/ rasam.
