Lemon Juice Concentrate (எலுமிச்சம் பழச்செறிவு)

During summer, you may often need a glass of cooler after going out in the hot Sun. Here is a method of making fruit juice concentrate, which can be mixed with cold water to make a cooler as and when needed! No presevatives added!

Ingredients: (Makes approximately 12 glasses)

Lemon, medium sized – 10 no
Sugar – 1 tumbler or 200ml measure
Water – 200ml

Method:  Cut the lemon fruits into halves, squeeze and extract the juice. Remove the seeds. Take care not to squeeze the lemon skin too much, lest the juice will have slight bitter taste. This recipe is for 200ml of lemon extract. 

Mix the sugar and 200ml water in a kadai. Heat the mixture on medium flame stirring continuously, till the sugar dissolves. Bring it to boil and switch off the fire. Now add 200ml of lemon extract to the sugar syrup and mix very well. Heat the mixture on a low flame just for a minute. Cool and store in a bottle. Refregirate and use lemon juice concentrate as and when needed.

How to prepare lemon juice: Mix three tablespoons of lemon juice concentrate with 200ml of cold water. Your lemon juice is ready!

You may add 1 teaspoon of honey and mix well. Alternatively you may add a pinch of salt to the juice. Serve chilled.
