Rava kesari also called as ‘Sojji’ (சொஜ்ஜி) is a frequently prepared
sweet in the South Indian household. This can be easily made with ingredients
normally available in your kitchen. You can serve kesari as a dessert, or a
snack or as part of a feast menu. Children just love kesari!
Ingredients: (Serves four)
Rava or
semolina – 1 tumbler or 200ml measure
Sugar – 1 tumbler
or 200ml measure (adjust to taste)
Ghee – a big
hollow ladle or 75ml measure*
Kesari color
– a pinch (optional)
Cardomom –
3-4
Raisins – 1 tablespoon
Cashew nuts –
broken, 1 tablespoon
*You may add more ghee (up to 100ml) if desired. This will
give rich taste to the preparation.

Method: Remove the cardomom seeds, powder them and
keep aside. Heat 1 tablespoon ghee in a kadai, add cashew nuts and raisins and
saute till the nuts turn light brown in color. Add rava and fry till it turns
golden brown. Switch off the stove. Add 1½ tumbler of water (300ml), cardamom
powder and kesari color and mix well till the color is spread uniformly. Now
add sugar and remaining ghee mix well. Cover and cook on low flame till kesari
starts to separate from the sides of the kadai. Switch off the fire. Serve hot.
