Simple Garlic Rice (பூண்டு சாதம்)


Simple garlic rice is my husband’s favorite dish and he shared this recipe with me. It is a simple, tasty and easy-to-make ‘mixed rice preparation’ with the subtle flavor of garlic. You can even use the previous day’s leftover rice for this recipe. If you like garlic, you will definitely enjoy ‘Simple Garlic Rice’. 

Ingredients: (Serves one)

Raw rice – ¾ tumbler or 150ml measure
Garlic – 6 pods, skinned whole
Onion – 1 no, chopped
Dried red chilli – 3 no (குண்டு மிளகாய் வத்தல்)
Oil – 2 tablespoons
Mustard seeds – 1 teaspoon
Split urad dhal – 1 teaspoon
Curry leaves – a few
Simple Garlic Rice (பூண்டு சாதம்)
Method: Wash and cook rice with 1½ tumbler (300ml) of water in a pressure cooker for 5 minutes or 5 whistles. Once the pressure subsides, remove from the cooker and allow it to cool on a plate.

Heat oil in a kadai, add garlic pods and fry till they start to turn brown in color. Now add red chillies and mustard seeds. When mustard seeds start to sputter, add urad dhal and fry till the dhal turns golden brown in color. Add chopped onions and saute till they start turning brown.  Add curry leaves and switch off the fire. Allow the masala to cool. Add cooked rice and mix the masala with rice using a rice spoon (சாதக்கரண்டி). Serve with appalam or vadam.
