Orange cashew custard is one of my favorite recipes. It is a layered dessert and has the blend of sweetness of custard, mild sourness of orange and richness of cashew nuts. This is the ideal dessert that can be served following a special dinner.
Ingredients: (Served Four)
Oranges – 3no, peeled, deseeded
Raisins – 1 tablespoon
Honey – 1 tablespoon
Cashew nuts – 3 tablespoons
Sugar – 3 teaspoons
For the custard:
Custard powder (vanilla) – 3 teaspoons
Sugar – 3-4 teaspoons (adjust to taste)
Milk – 1 teacup or 200ml measure
Method: Peel and deseed the oranges. Remove the flesh and keep aside. Grind cashew nuts with little water into a smooth thick paste. Mix sugar and cashew paste. Heat this mixture in a kadai on low flame till it thickens and water is fully absorbed.

Mix custard powder in milk thoroughly without lumps. Add in sugar.
Heat the mixture on low flame stirring continuously till it thickens. Remove
custard from fire and allow it to cool.
Place the orange flesh at the bottom of a bowl. Add raisins over the
orange flesh. Top it with honey (Fig.1).

Now spread the cashew paste evenly over the fruits as a thin layer (Fig.2).

Finally add the custard on top of the cashew paste (Fig.3).

Refrigerate for 45 minutes to 1 hour. Your orange cashew custard is ready!
How to serve: Make deep slits vertically through the dessert. Scoop out the dessert
along the slits so that all layers are served in each scoop. Serve chilled.
