Sweet Lime-Capsicum-Macaroni Salad


Salads can be made wholesome by adding ingredients like pasta. Here is a recipe that combines sweet lime, capsicum and macaroni. It goes well with continental spread. However, you can serve this salad as in-between-meal snack!

Ingredients: (Serves two)
Elbow macaroni – ½ teacup
Capsicum – cut into small pieces, 2 tablespoons
Sweet lime – 1 no, peeled, deseeded
Olive oil – 1 tablespoon
Pepper corn – 4-5, coarsely ground
Oregano – ¼ teaspoon
Salt – to taste

Sweet Lime-Capsicum-Macaroni Salad
Method: Boil macaroni in 1½ teacup (300ml) of water and required salt till it is cooked al dente (cooked, but firm to bite). Drain, run through cold water and keep aside. 

Peel, deseed and remove the flesh of sweet lime. Cut capsicum into small pieces. Heat olive oil in a kadai/wok, add capsicum pieces, toss once or twice and switch off the fire. Add sweet lime flesh, macaroni, salt, ground pepper and oregano to the wok. Mix well with a fork. Transfer to a bowl. Refrigerate for 30 minutes. Serve chilled.
