Exotic Salad


A meal of chapatti or pulka and sabzi is incomplete without a salad, be it simple sliced veggies or exotic combos in lavish dressing. I just enjoy trying various combinations of fruits and vegetables with different dressings or spices, while making salads. This salad, a combination of sweet papaya, slightly sour oranges and crunchy cucumber with simple spices indeed tastes exotic. Just try this out.

Ingredients:
Oranges – 3no, peeled and deseeded
Cucumber – 1no, cut into small cubes
Papaya – cubed, ½ teacup
Salt – to taste
Pepper corns – 4-5no
Mustard – ¼ teaspoon
Fresh coriander leaves – a few sprigs

Exotic Salad
Method: Peel, deseed the orange and remove the flesh. Peel, deseed the papaya and cut the flesh into cubes. Wash and cut cucumber into small cubes. Powder mustard seeds finely and grind pepper corns coarsely using the mortar and pestle. Mix the fruit pieces and cucumber cubes in a bowl. Add salt, pepper powder and mustard powder. Mix well with a fork. Garnish with coriander leaves. Refrigerate for 20-30 minutes. Serve chilled.
