Chennai weather is still cold with an outbreak of flu, and soups have found a legitimate place in our daily menu. Here’s an easy to make mixed vegetable soup for you to keep warm.
Ingredients: (serves two)
Carrot – small, 1 no, cut into small pieces
French beans – 4no, cut into small pieces
Cabbage – shredded, ½ teacup or
200ml measure
Onion – half, chopped finely
Butter – 1 tablespoon
Salt – to taste
Pepper powder – to taste
Red chili sauce – ¼ teaspoon
(optional)
For the stock:
Ash gourd – cubed, 1 teacup or 200ml measure
Onion – half, cubed
Garlic – 1 pod, peeled
Method: Add 2 teacups or 400ml of water to ash gourd, onion cubes and
garlic pods, and pressure cook for 5 minutes. Once pressure subsides, blend it
in a liquidizer and pass through the sieve.
Heat butter in a kadai, add chopped onion and sauté till it starts
to brown. Now add the cut vegetables and required salt. Cover and cook on low
flame for a minute. Now add the stock, chili sauce, pepper powder and salt. Mix
well and bring it to boil. Then simmer for 5 minutes. Switch off the stove and
serve hot with bread slices or soup sticks.
