Fresh Vegetable Salad


Fresh vegetables and fruits are a good source of anti-oxidants. Moreover, vegetables and/or fruit salads help reduce the servings of carbohydrates in your diet. Addition of salads makes your meal nutritionally more balanced. You can combine fruits, vegetables, pasta and/or sprouts as per your choice and add different dressings to make the salad more interesting. However, when you are hard pressed for time, this fresh vegetable salad would be very easy to prepare. Lets’ proceed with the recipe.

Ingredients:
Cabbage – shredded, 1 teacup or 100ml measure
Cucumber – cubed, ¼ teacup or 50ml measure
Carrot – cubed, ¼ teacup or 50ml measure
Radish – cubed, ¼ teacup or 50ml measure
Onion – 1 no, finely chopped
Salt – to taste
Olive oil – 1 tablespoon
Dried basil – 1 teaspoon
Red chili flakes – ¼ teaspoon (adjust to taste)

Fresh Vegetable Salad
Method: Wash and peel cucumber and radish. Wash and scrape the carrot. Cut the vegetables as instructed. Heat oil in a wok on medium flame, add the cut vegetables and toss a few times. Switch off the fire. Add salt, chili flakes and dried basil. Mix very well. Refrigerate for 30 minutes. Serve chilled.
