Success of baking depends on the right quantity of ingredients and the consistency of batter/dough you make. Once you get a hang of these steps, you will find 'baking' to be as easy as your regular cooking. Today I wish to share the recipe of date pudding, which is one of the basic pudding recipes. This can be served as a dessert alone or in combination with vanilla ice cream. Warm date pudding served with vanilla ice cream makes an excellent combo and you may want include this in your special dinner menu. Here’s the step-by-step method of making this dessert.
Ingredients:
All purpose flour or maida – ½
teacup or 100ml measure
Sugar – ¼ teacup or 50ml measure
Sour curds – ⅓ teacup or approximately 65ml
Milk – 1 tablespoon
Cooking soda – a pinch
Baking powder – ½ teaspoon
Plain butter – 25 grams
Dates – chopped finely, 2 tablespoons
Vanilla essence – few drops
Butter – for greasing
Method – preparing the batter: Sieve flour, cooking soda and baking powder together 2-3 times. Keep aside.

Powder sugar finely using a mixer-grinder
and transfer it to a bowl. Add butter and vanilla essence to the bowl and beat
with flat spoon or hand blender till the mixture turns creamy. Add curds to the
mixture, and beat the contents together till the mixture has uniform creamy
texture. Now add flour mixture little by little while beating continuously till
all the flour is added up. Next add milk and blend very well. Finally add the
chopped dates and mix well with the batter (Fig.1).

Grease a microwave safe bowl (approximately
6” in diameter) with butter. Add in the pudding batter and gently shake the bowl
so that the batter settles evenly (Fig.2).

Baking
instructions: Preheat the microwave oven using the convection
mode at 200oC for 2 minutes. Place the bowl on grill tray and bake at
200oC using the convection mode for 12 minutes or till the crust turns
golden brown in color (Fig.3).

Once baked, remove from the oven and allow it
to cool. Cut the pudding into quarters and serve with a scoop of vanilla ice cream!
