Sweet 'n' Sour Vegetable

Sweet ‘n’ sour vegetables is a dish that has a tangy taste with an underlying sweetness. It goes well with both vegetable noodles and vegetable fried rice.

Ingredients: (Serves 4)
Cut vegetables – 3 teacups or 600 ml measure, cut into medium sized pieces*
Spring onion leaves – chopped, ½ teacup or 100 ml measure
Ginger – ½” piece, grated
Onion – medium sized, 3 no, cubed
Tomato – 1 no, cubed
Oil – 1 tablespoon
Sugar – 3 teaspoons
Salt – to taste
Vinegar – 3 tablespoons
Soya sauce – 2 tablespoons
Green chili sauce – 1 tablespoon
Capsico sauce – 1 teaspoon
Tomato sauce – 2 tablespoons
Corn flour – 1 tablespoon

*You may use cucumber/gherkin, carrots, French beans, green peas, cabbage and cauliflower in desired combinations.
Sweet 'n' Sour Vegetable
Method: Heat oil in wok, add onions and fry till they become transparent. Add spring onion and sauté for a minute. Add the vegetables and tomato, and sauté for 2 minutes. Now add ½ teacup (100 ml) of water and salt. Cover and cook till the vegetables are partially cooked. Add the sauces, vinegar, sugar, and ginger. Bring the contents to boil. Dissolve corn flour in ¼ teacup (50 ml) of water, and add to the vegetables while stirring continuously. Simmer till the sauce thickens. Serve hot with vegetable noodles or vegetable fried rice.
