Spring Rolls

Air fryer is very useful for making quick tea time snacks. With proper planning, you can make fresh snacks everyday in less than half an hour. Here’s the recipe for making spring rolls.

Ingredients:
Onion – 1 no, finely chopped
Carrot – small, 1 no, grated
Cabbage – finely chopped, 4 tablespoons
Green peas – shelled, 1 tablespoon
Ginger – 1” piece, grated
Green chili sauce – 2 teaspoons (adjust to taste)
Soya sauce – 1 teaspoon
Spring roll wrappers or sheets – large, 4 no
Oil – 2 teaspoons
Salt – to taste
Oil – for brushing


Method: Heat oil in a wok; add chopped onion and fry till the pieces become transparent. Then add the cut vegetables and salt. Mix well. Cover and cook on low flame till the vegetables are partially done. Add soya sauce, green chili sauce and ginger. Mix well and cook for a minute. Remove from fire. Divide the contents into 4 parts.

Place the wrapper on a plate. Place one part of the stuffing at the lower portion of the wrapper as shown in the image. Bring the lower end of the wrapper over the stuffing (1). Roll once. Now bring the side ends of the wrapper over the rolled stuffing (2). Finally bring the top end of the wrapper over the rolled portion. Repeat the same process with the remaining wrappers. Brush the rolls with oil and place them in the air fryer baking tray; fry at 200ยบ C for 10 minutes; turn once in between. Serve hot with tomato ketch up.

Note: Spring roll wrappers or sheets are available in different sizes and numbers (20s or 40s). They are deep frozen and tend to dry easily if not stored properly. Before each use, you need to thaw the pack for 30 minutes in room temperature. Gently peel off the wrappers required and store the reaming sheets in the original pack, wrapped in a wet cloth and inside a food safe zip lock bag in the freezer compartment.
